The title of this U.S. edition is misleading -- this is an excellent book about regional cuisine in Southwest France. The Browns, Brits, have made their home there, and the affection shows. In addition to recipes, there are mini-essays about how Bayonne ham is cured, or Armagnac distilled. Nice. With color photos and b&w maps throughout. Half-incht DJ tear at top of back cover. VG+/VG.
