Chez Panisse Cooking (David Goines cover)


By Paul Bertolli with Alice Waters, Random House, 2006 printing of the uniform- cover "Chez Panisse Cooking Library Series" edition. First published in a deluxe 1988 edition. Bertolli became a food star as an early executive chef at founder Waters's famous restaurant.

From the a-bit-much DJ flap copy: "Bertollli provides reflections, recipes, and menus that lead the cook to a critical and intuitive understanding of food itself, of its purest organic sources and most sublime uses." Consider this cook led, if not sublimely used.

Hardback with tan pictorial DJ, 423 pages. DJ has front cover illustration of a bunch of carrots by Waters's longtime pal, David Goines, who has graced the covers of most Chez Panisse books. Preface by Angelo M. Pellegrini.

In this more moderately priced edition, the book photos by Gail Skoff, printed in hand-tinted color on coated stock paper in the original have been replaced by some black and white photos. Still, same text and terrific recipes by Bertolli. His book is praised in blurbs on the back DJ cover by icons such as M.F. K. Fisher ("I wish I'd done it myself") and Richard Olney ("A celebration of purity"). We like simple and delicious "Mussels Steamed with New Zinfandel," but not living in Berkeley, CA., we used the alternate suggestion of a Beaujolais Nouveau instead. Fresh thyme of course, with chopped garlic and a shallot, a bay leaf and fresh parsley. Do we pass the test, St. Alice?
