Cooking with Ease -- in English and Portuguese

by Mansao de Repouso (The Niteroi Rest Home, Rio De Janeiro, Brazil). A hard-to-find Brazilian classic. Grafica Editoria Livro, S.A., 1970 revised edition. Hardback, coated stock text pages, no DJ as issued, 440 pages. According to a website on Brazilian cookery, this remarkably complete cookbook is a must have. "Good selection of recipes along with a very complete bi-lingual glossary of culinary ingredients and terms."

We can't imagine that this book was written by amateurs -- it must have taken years to assemble --so it's puzzling that no author or editor is mentioned. The section on Brazilian Specialties alone is fabulous. We like the Brazilian Stew with Manioc Meal Mush (Cozido Completo com Pirao) -- Brazilian version of the Caribbean iron-pot creole classic with, I swear, eventually just about EVERYTHING soul food-wise in it -- ham, beef, pork sausage, cassava root, carrots, onions, turnips, ears of corn, cabbage, sweet potatoes, okra, collard, chayote and pumpkin. Plus manioc (cassava flour) and broth of the stew added at the end. Served with a side of hot sauce. Really. (I've had versions of this dish. It's wonderful).

Cover front edge tearing, cover wear at extremities; text block tight. VG.
