Spicer, one of the most well-regarded of the "new" New Orleans chefs and owner of the much acclaimed Bayona and Herbsaint restaurants, is known for cross-pollinating Southern, Creole, Asian, Latin and Middle East (among others) ingredients and dishes. Our favorite is Grilled Shrimp with Black Bean Cakes and Coriander Sauce. In her introduction to the dish, she writes it's her best-selling item at Bayona.
