Nouvelles Saveurs Finlandaises

by Eero Makela, Gero Hottinger and Pekka Immonen, Otava, Helsinki, first printing, 1995. Color photo covers, no DJ, 127. Text in French. The three chefs present updated Finnish classics and new dishes with an international twist. They are the best known chefs in that country, and collaborated before in promoting that country's cuisine. Makela, who died in 2008, owned The Palace Gourmet, which a Wikiedia entry says was the first Finnish restaurant to win a Michelin star and become a Cordon Bleu. Using choice fresh simple ingredients, the three cook up mouth-watering recipes enhanced by gorgeous color presentation photos. VG+.
